Abstract

Avocado peel extract (Persea americana) is an organic material containing quercetin, tannins, and saponins. This extract can be used as a multifunctional coating by preventing corrosion and inhibiting microbial growth on food can packaging. This study aims to examine the anticorrosion and antibacterial activity of avocado peel as a multifunctional coating. In this study, avocado peel was extracted using a maceration method with 96% ethanol. The obtained extract was characterized using a Fourier Transform Infrared Spectrophotometer (FTIR). Subsequently, avocado peel extract at concentrations of 0.1%, 0.3%, and 0.5% was tested for anticorrosion activity using a potentiodynamic polarization test. Antibacterial activity testing was based on the inhibition results against Escherichia coli and Staphylococcus aureus, as well as Total Plate Count (TPC) results from avocado peel extract at the same concentrations. Based on the FTIR results, avocado peel extract contains –OH, aliphatic C–H, C=O, and C–O functional groups. The anticorrosion test results showed that avocado peel extract at a concentration of 0.3% produced a reduction in corrosion rate to 1.20 × 10⁻⁸ and the highest increase in corrosion inhibition efficiency percentage of 92.47%. The 0.3% avocado peel extract concentration also demonstrated the highest inhibition against the test bacteria Escherichia coli at 14 mm and Staphylococcus aureus at 13 mm, as well as the greatest reduction in microbial count in meat samples to 5.2 × 10³ CFU/g. These results indicate that avocado peel extract has potential as an environmentally friendly preservative and metal coating material for the canned food industry.
